Raw infusion is the best at low levels, but Sharp gets better fast. The damage of your weapons is determined by the base damage of the weapon + the scaling. Both get better by upgrading the weapon. Scaling means how much bonus damage you gain through your attributes. Raw gem removes all scaling and raises base damage.
Grass Crest will still give you stamina regen while 2H. It also stacks with the Chloranthy Ring. I'm currently using a Sellsword build as well. I use Chloranthy, Carthus Bloodring and whatever for the other 2 slots. Throughout the game I was mainly using Lloyd's Sword and Lloyd's Shield. I also buff my Twinblades with Carthus Flame Arc.Gotthard's is amazing for PvP and decent in PvE. The L1 attacks stagger enemies pretty easily and with the Pontiff Right Eye Ring get huge buffs. But 60 DEX is the way to go on a DEX build. Very viable in PvE, somewhat less so in PvP. You’ll want at least 40 Dex, but I don’t recommend going to just 60, since the scaling from 40-60 gives you only like ~22AR for 20 points.

Maybe you shouldn't be using them. The twinswords are definitely harder to use than most. Dark Souls is designed around blocking, and playing a character that doesn't block requires a lot of learned skill in how the enemies work.
